Some like it sweet some like it tart. When it came to desserts, he had a decided preference for tart flavours. He always thought that they added an extra something, a hint of personality, to an otherwise all-sweet palette. His favourite combination was lemon with cream cheese “ the creaminess of the cheese negated the sharpness of the lemon to create a soulful burst of flavours that always veered on the brink of being too much but never quite got there. It was almost as if his palette was reminding him to not always play safe. To take some risks that would make life that much more interesting.
